Lately I have been really experimenting with figs. The subtle sweetness and almost crispy inside texture they have makes a great addition to any savory or sweet dish. This is a recipe for a fresh peach and fig tart with strawberry preserves and a sugary crust. This is a very simple tart to make. I normally don't bake but when I do any pre-made crust is fine by me. This recipe tastes great a la mode too.
thawed pie crust (in the freezer isle)
egg wash (a beaten egg w/ a splash of water)
Preheat the oven to 425 degrees.
Flour the surfaces to keep the dough from sticking. Roll the dough into a even circle. Slather center of dough with preserves. Arrange the peaches and figs leaving a 2" room around the edge so that you can fold it over. Fold in the edges and pinch the dough together to form an open-faced tart. (Usually ready-made dough comes with 2. Just use the other one to make another tart.) Brush egg wash around crust. Sprinkle raw sugar on crust. Bake for 45 minutes.
This recipe is so good and easy. I've also done this with plums and it was just as good. Enjoy with vanilla ice cream. Now hurry and make it before peaches are out of season!
