This flatbread recipe is simple and healthy and will hopefully inspire you to add whatever you wish to your version of flatbread. On this one, I put a few of my favorite things.
fresh mozzarella cheese
low-moisture mozzarella cheese
chevre (goat cheese)
Preheat your oven to 450 degrees Fahrenheit. Lightly toast the flatbread in the oven for 5 mins. Take it out then place the prosciutto, mushrooms, tomatoes in a single layer on top of your flatbread. Don't crowd your ingredients or they won't cook properly. Place the cheeses on top. Sprinkle the thyme and black pepper (exclude salt since there is already a high salt content in the prosciutto and the cheeses), and lightly drizzle olive oil and balsamic vinegar on top. Bake on a baking sheet or pizza stone for 12-15 mins or until the cheeses are completely melted. Lastly, place a little bit of arugula on top after it has finished baking. Slice up the bad boy and enjoy!
Be creative with your ingredients. Imagine the possibilities: roasted garlic spread, fresh basil, grilled eggplant... oh my. This is a great way to enjoy a healthy alternative to a pepperoni pizza and a great way to get the family involved. Have fun with it. I can see a flatbread party in my future in the likes of my grilled cheese party.
