8 Hour Red Wine Pot Roast

Don't you just love those recipes where you can throw everything into a pot and just forget about it? Me too.  I have yet to perfect cooking in a slow cooker but I love this appliance.  They can be inexpensive (I got mine for $22 on sale), and versatile.  Nothing is easier than putting everything in a pot, going to work, and then coming home to a hot meal.  I recently made a red wine pot roast in it and it came out good but, of course, better the next day. 
Ingredients:
beef chuck cut in cubes
potatoes
onions
carrots
garlic
equal parts chicken stock and red wine, preferably Burgandy
3 Tbs. cornstarch
salt and pepper to taste
 
1. Turn on the pot to low heat. Place the beef and the garlic inside the pot.  Generously sprinkle with salt and pepper.

2. In a small cup stir together the cornstarch and a little bit of chicken broth then add to the pot.  Add equal parts stock and wine to the pot until the beef is slightly covered.  Add veggies on top of the beef.  Cover and cook for 8 hours.

3. When it is almost done, add more salt and pepper to taste.  Serve with rice or pasta.

How easy was that?  A little too easy.  The only thing you have to do is not to forget about it! Either way, I'm sure it will still taste as good.  I hope you guys enjoy!
