Here's a simple pickled onion recipe. If you have been following my Instagram you know that I have a bánh mí addiction. The combination of pickled vegetables with fresh cilantro, jalpeños, and different cuts of meat is delish. And since I have been so MIA lately, tomorrow I will post my own sandwich recipe that includes pickled onions and a Sriracha mayo. Yum!
1 large red onion thinly sliced
1 cup of red wine vinegar
3 Tbs of sugar
1 tsp of salt
1 star anise
1/2 stick of cinnamon
Combine all the ingredients in a bowl or a jar, cover and refrigerate overnight.
The next day you will have something so simple, yet adds loads of pizazz to your sandwich, salad, or any side dish. As summer is quickly approaching, I am so excited to pickle other fresh produce like asparagus, green beans, mushrooms, and even eggs! Yea, let's hope pickled eggs are good, I've never had them.
