Steak Sandwich with Sriracha Mayo

Hey, remember that pickled onion recipe I posted yesterday? Did you make it? If you did you could now make this delicious steak sandwich with Sriracha mayo.  If this sandwich doesn't inspire you to pickle onions today, I don't know what will.

1 French baguette
marinated meat (I used Trader Joe's Bool Kogi sesame marinated beef) cooked, then sliced
bean sprouts
julienned carrots
pickled onions
1 Tbs mayonnaise
Sriracha to taste

In a small bowl mix the mayonnaise and a squirt of Sriracha.  You can add more Sriracha for a spicier mayo. 
Slice the bread down the belly, and toast it open on a grill pan or your toaster oven.  Sweep the mayo on the inside of the bread with a butter knife or a spatula and layer the meat, bean sprouts, carrots, and onions. 

This sandwich is so filling and yet still very fresh.  The spicy mayonnaise compliments the marinated beef so well.  Those pickled onions really make the sandwich pop and adds a perfect acidity to the other ingredients.  It's also perfect for packing on-the-go and letting all the flavors marry together.  Hmm, picnic anyone?
