Happy Hour: Make Your Spirits Bright

My friends and I always get together and create a feast every Thanksgiving.  I wanted to share this cocktail with you that my friend, Limbert, made this year.  He definitely made up for the choking cinnamon cocktail from last year's Thanksgiving!  This year his cocktail was a delicious twist on the mimosa with aromatic rosemary and tart cranberries.  Like a Christmas tree in your glass! I thought this drink would be even more perfect for Christmas.  The colors are cheery and bright, and the flavors are sweet and earthy. 

(makes 8 cocktails)
1 cup fresh cranberries
3 cups boiling water
juice of your preference
8 sprigs of rosemary

Boil water.  After the water has come to a rolling boil, turn off the burner and toss the cranberries in.  This will help soften the berries.  Leave them in the hot water for 5 minutes and then drain.

Place the rosemary in the glasses and fill half way with juice.  Top with champagne.  Garnish with the cranberries.  Enjoy!

With each sip I could smell the fragrance of the rosemary.  It was so festive!  It also gave the drink a slight herbacious flavor that wasn't too intense.  I imagine this cocktail would also look great with cranberry juice or just straight up champagne.  I hope Limbert makes it again for our Christmas gift exchange!
